Shiitake, also known as "fragrant mushroom," is a mushroom belonging to the Marasmiaceae family. Its brown cap has a diameter of 5 to 12 cm and its flesh is white. It grows wild in Asia on tree trunks, especially oak trees in humid forests. Known since the Ming dynasty (1368-1644), it was then reserved for the emperor and his family.
